Using wine as a vehicle to study multisensory perception and cognition

Wine tasting offers a unique opportunity to explore how our senses work together to create a cohesive perception of flavour. While traditional wine education focuses on training tasters for consistency and accuracy, this talk will highlight multisensory interactions that shape our experience of wine. We will discuss how vision, hearing, and touch—beyond just taste and smell—play a role in our perception of wine, offering insights into the underlying neural processes that govern these sensory interactions.

In the second part of the talk, we will present a recent study investigating whether metaphors can enhance memory for wines. The study examines how different wine evaluation styles, particularly the use of visual, auditory, and tactile metaphors, aid in the short-term recognition of red wines. Together, these discussions provide a rich perspective on how we can use multisensory frameworks to study both perception and memory.
